Fifty years ago, the Hedary family introduced Fort Worth to hummus, and the warm, welcoming reception of their Mediterranean cuisine exceeded all expectations. What started as a humble introduction to new flavors quickly grew into an iconic institution, with the Hedary family’s restaurant becoming a beloved staple in the community.

Marios Hedary’s culinary journey began before he could walk—he was literally born inside the first Hedary’s restaurant in Lebanon. From a young age, Marios became familiar with the art of cooking, learning from his parents, Leila and Antoine, who were dedicated to preserving authentic Lebanese recipes.
When the Hedary family relocated to Fort Worth and opened Hedary’s on Camp Bowie, Marios became an integral part of the kitchen, continuing to learn and refine his skills under the careful guidance of his parents. The Hedary family’s dishes quickly became beloved in the area, known for their authenticity and flavor.
In 1992, Marios followed his passion and opened Byblos Mediterranean Restaurant in the Fort Worth Stockyards. His vision was simple: to offer a warm, welcoming space where people could enjoy the flavors of Lebanon, combining traditional Hedary’s recipes with the comforting Lebanese dishes his mother would make at home.
From the vibrant Middle Eastern décor to the mouthwatering food, belly dancing, and hookah, every detail is crafted to transport diners to the heart of Lebanese culture.
Today, the Hedary family stands as an iconic institution in the Dallas-Fort Worth area, recognized for their exceptional mastery of Mediterranean cuisine and their unwavering commitment to authenticity. Marios has called Fort Worth home for fifty years. While he proudly holds on to his Lebanese heritage, he has truly come to love and embrace the Dallas-Fort Worth community as his own.
